### What problem does this PR solve?
This PR addresses two critical issues with Apache Paimon catalog integration:
1. Enable partition display from Paimon catalog - Add support for showing
partitions from Paimon catalog tables
2. Fix Paimon Date type partition conversion - Resolve conversion issues
when mapping Paimon Date partitions to Doris List Partitions
### Problem Description
**Issue 1: Missing Partition Support**
Previously, partitions from Paimon catalog were not displayed or
accessible.
**Issue 2: Date Type Conversion Error**
Apache Paimon stores date values as integer representations (e.g., 19737
represents 2024-01-15). When converting these to Doris Date types without
proper transformation, the following error occurs:

org.apache.doris.common.AnalysisException: errCode = 2, detailMessage = date
literal [19737] is invalid: null
```
### Background:
PR [#46641](https://github.com/StarRocks/starrocks/pull/56754/files)
worked around this issue by treating Paimon date type partitions as
unpartitioned tables. This PR provides a proper solution by implementing
correct date type conversion.
