1.) The docs discuss adjusting {{file_cache_size}}, which is a DSE holdover,
and should be removed from the OSS docs. SAI uses {{MmapRebufferer}}, which
doesn't touch the chunk cache.
2.) The docs for SAI's metrics include a handful of scopes that no longer exist
and should be removed. (ex. {{OffsetFetch}}, {{TokenFetch}}, etc.)
