Try with
camel.sink.endpoint.keyName=topics/${headers.customerName}/${date:now:yyyy}${date:now:MM}//${headers.interval}/{headers.name}
And send the headers in your Kafka topic. Another possibility is creating an
SMT and enrich the message with those data and add keyName header.
