Steve is right, composer would be listed in the 100 tag. Conductor will most 
likely be listed in the 511 tag which lists performers/participants in a work. 
As always, local cataloging practices may vary but those are the standards.

A work composed by a person would have that person listed as an author in the 
100 field.  I don't think a conductor is supposed to be listed in the 100 field 
of a performance.
