Is there not a property that you can touch when you change the columns, and add 
that property to what is returned by -keyPathsForValuesAffectingPreview? The 
property doesn't have to DO anything, it just has to be observed by the 
preview. As far as I can tell it's the only way to notify the print preview of 
changes that I've discovered.
