Because there's no choice. They are the only way to achieve a large number of extremely common operations. I'm looking forward to seeing how long it takes for Final Cut Pro and Xcode to be working in the sandbox. You can add a 'sandbox' column in Activity Monitor (View > Columns > Sandbox). The fact that only TextEdit and Preview are sandboxed in 10.7.2 speaks volumes, IMNSHO. Apple is once again not eating their own dog food.
