I may be off on the details, as I don't have time to refer to the 
custom-toolbar-icon part of the iOS Human Interface Guidelines document. You 
can do that yourself.

The color of the icons doesn't affect how they are displayed. The icon is drawn 
by alpha, not color. If you feed in an opaque square, no matter what's been 
painted onto it, the icon will show up as a square. I seem to remember that 
they recommend white-on-transparent, but I've seen nothing wrong from 
black-on-transparent icons.
