From my understanding, unless you are running on a 32bit CPU these days, then by default, everything but the kernel on certain Mac models is 64bit.
I believe it may depend on EFI, my MacBook Pro 4,1 has a 64bit CPU and can be told to boot with a 64bit kernel (hold 6 and 4 on boot), but defaults to a 32bit kernel, my current model Mac Pro on the other hand defaults to a 64bit kernel. In 10.6 nearly everything else is 64bit however. Matt.
