The more or less definitive books are Programming with Quartz by David Gelphman 
and Bunny Laden, and 
Quartz 2D Graphics by Scott Thompson.

Since those two books were published, Core Animation has also emerged for both 
desktop and mobile.
A reasonable book is 
Core Animation: Simplified Animation Techniques for Mac and iPhone Development, 
Rough Cuts By Marcus Zarra, Matt Long
