Well in the case of projectors, there's no particular reason why a projector couldn't contain the necessary hardware to detect the size of the actual image and return that.

VNC is a bit trickier, to be sure, and would require changes to the protocol to pass back the data from the display on which VNC was being used.

Anyway, while the numbers can't be relied upon, they may well be better than nothing, and one would hope that in future they're likely to become more reliable rather than less. If high accuracy is required, you could always implement a pane in your app's Preferences dialog where the user was asked to measure and/or resize some straight lines.
