You really wouldn't want your model layer generically and arbitrarily spamming the main even loop with change notifications anyway. Nor do you really want a "fully threadsafe" AppKit where any method can be invoked anywhere from anytime.
Sounds grand, but down that path lies the madness of unpredictability unresponsive applications and performance nightmares that are fantastically difficult to unravel.
Unfortunately, threading within an application is inherently tied to the business model -- the user experience -- of your application and, thus, threading your various operations and getting said changes over to the MEL are tasks that need to be designed for within your application.
Certainly, Cocoa can be made to better support multicore development. And effort has been and will continue to be expended upon on that front with each release of Mac OS X.
If you have specific enhancement requests, please file a bug via http://bugreporter.apple.com. If your request is "make MVC and KVO play nicely with threads", you will need to provide details on exactly what you mean -- exactly how that is to be achieved.
