How does one go about adding themes to a modern Mac App?

By "themes", I mean something like the Twitter for Mac app which has both a
Light and Dark appearance. These appearances are distinct from Cocoa's
vibrant light and dark NSAppearance options which are too limiting. The
Twitter app has custom colors/graphics/drawing to achieve their custom
Light and Dark look. Furthermore, there appears to be a subtle fade
animation when transitioning from one theme to another, those this aspect
is much less important.

By "modern", I mean one that supports Sierra and higher.

I'm looking for a general strategy or architecture to achieve this. If
there are good, modern examples out there, I'd appreciate the pointer.
