I suspect the difference is in Normalization Forms. Specifically,
form C vs. D.

The idea is that the same character can be obtained from a single
code point or by several combining code points.
In Cocoa, see -precomposedStringWithCanonicalMapping and -
decomposedStringWithCanonicalMapping.
