“Cooler” is subjective, “easier to use” is objective. People are used to the + button; there’s no confusion about how to use it to add a row. Your method is unfamiliar and potentially non-obvious, especially if the table is long enough to scroll and the ‘add’ row is not visible. The original (and I mean original, 1.0 version) of the Finder did something like this for new folders - it had a phantom folder that you copied to make a new one.
