I asked our local Shipwright here what he used, and he said Minwax Polyurethane. Like you would use on your hardwood flooring or on a gym floor. For some reason we think you have to use marine varnish, and well, down below, not so much.
I redid my sole around 5 years ago or so, and I believe it still looks great. I removed it to the shop over the winter, and used a heat gun to scrape the varnish off, sanded, glued the teak and holy back together where necessary, ( it is solid teak with holly strips) and put on around 4 or five coats. That urethane wears like iron.
