Have you thought about using fiberglass reinforced wall panels like the ones 
used in bathrooms.  A 4x8 sheet goes for about $30 at Lowes or Home Depot. 

This is what a previous owner used on my LF38.    Attached is a link to an old 
photo showing the panels.
