Mike, Different boat etc., but… You want to have the heater as close to the engine as possible. I assume that the heater will be heated with the engine coolant (and possibly with shorepower). The difficult plumbing is from the engine to the water heater and back. And you want to limit the amount of extra coolant that you need (i.e. the length of the hoses). Plumbing to the head is usually much easier, because you just run a flexible pipe (PEX?) and that can go just about anywhere. Also to consider is how you are going to deal with the water coming out of the shower (sump, pump, drain to the bilge etc.).
