The cap (donut) in the cockpit hold the rudder shaft in the boat.  There are
two set screws that must be loosened first.  Turning it counterclockwise
will lower the rudder.  It's a lot easier to do without any tension on the
rudder shaft.  I use a small hydraulic jack and some timbers to take the
pressure off.

The quadrant bolts can be a bear.  I've had my rudder out three times now.
Anti-seize is a wonderful thing.
