Andrew, you would have to stay away from most of the Eastern shore. As Joe mentioned, the channels leading to both Kent Narrows and Knapps Narrows are not deep enough - I've been aground in each with 5 feet (and trying to stick to the known deeper areas - neither is passable with 7). With seven feet, you would have to do a lot of straight line motoring to stay in the rather narrow channels - I guess a 427 big block would provide enough power - my buddy's Perkins 90 in his 36 footer was barely enough to pull us out in one instance (23 inch four blade prop).
Even Mr. Connor ran aground in Toshiba Volvo, but that was 13 feet deep - and he was just trying to tack up the Bay. Stick to the center of the Bay (but be wary of commercial traffic in the shipping channel) - and on the western shore, and a good forward scanning sonar would help.
