I'm not the expert on sanitation system design so you should probably
consult Peggy Hall, Nigel Calder or Don Casey's books. I can share my
design but it's by no means a professional opinion and only worth what
you're paying for it :)

I'm on the great lakes, no overboard discharge so my requirements are also
different than yours.

My head is to starboard just aft of the v-birth. The intake seacock is
located just aft of the head under the starboard side settee. The holding
tank is located under the v-birth and is bow shaped. I put all of the hose
connections on TOP of the tank so that they don't leak. There is a pickup
tube inside the holding tank that connects to the pump out hose. I did not
plumb in any siphon breaks because I keep the thru-hull closed at all times
except when the head is being used, which is very rarely. I may install a
siphon break from the head pump to the toilet at some point, maybe this
winter, just for peace of mind. This past summer I was pressed for time
with a cruise planned and not enough time for entire project list. The hose
run from the toilet to the tank is uphill unfortunately so I make sure to
flush a lot of water through at the end of a day's use of the head to push
everything into the tank. My vent is 1" but shrinks to .75" part way along
because I discovered a limitation in the size of hose I can fit through a
part of the bulkhead while doing the project.

Pretty standard and works very well so far. Tank is 20 gallons and on a
recent ten day cruise with just the two of us we pumped out twice. We put a
lot of water through with each flush. Still new at this washroom on a boat
thing and paranoid.
