Calypso, a 1971 C&C 43-1 is the first C&C I found that had the 6'5" head room needed, and at that it is only 2 or 3 sq. ft. around the center line galley sink. Moving outboard (towards the stove) or forward the headroom quickly shrinks to under 6'. I have a groove on the top of my head from the deck hardware mounting bolts that protrude into the saloon.
If you are taller than 6'4" also check the bunk length. The 1974 C&C 39 I sailed several Transpacs on did not have enough headroom or bunk length. The 1980 C&C 36 I owned for 7 years was also short in the headroom and bunk length. IIRC on the 36 I used the dinette/drop table combo and slept on an angle when cruising.
