You can install Debian or Ubuntu into a chroot instead of trying to dual boot this thing. IIRC the ChromeOS does not use X, so you may have issues getting GUI apps to run. Additionally these Chromebooks usually use ARM based CPUs, so you can't run x86 apps with WINE, for that you would need a full virtualization solution which is going to be slow.
There is a way to run android apps on ChromeOS though I have never actually done this. Chromebooks are awesome, but they flip your usual computing paradigm around. Office365 and Google Docs work for me though the only way to tell is to try it out. You can do this with the Chrome browser and and your current computer. I believe that Microsoft offers a free trial. Another option would be to have office installed onto a fully fledged PC that you could remote into. A more expensive option would be a fully fledged PC like the Lenovo 900 or Dell XPS 13.
