First, Handbrake is a transcoder, and will only work with unencrypted DVDs (
https://trac.handbrake.fr/wiki/Sources).  Decrypting and transcoding are
two completely separate tasks and so most open source solutions will take
the form of different utilities to tackle the problems independently.  It
should also be noted that there are legal issues surrounding the decoding
of DVD and blu-ray media.

Handbrake is pretty much the king of the hill these days.  There are
Windows and Mac versions so you should be able to get some tutorials on
youtube if you are not successful with the documentation.

Personally I use MakeMKV (I purchased a license and run this on Linux), and
Handbrake together for the rare cases when I want to do this (I own very
few physical disks these days).
