Not sure what the problem is.  I play media off of network shares all
the time, in fact most of the time since I keep everything on the
server in the basement.  Client machines can be Linux, Windows (XP,
Vista, and 7 all live here)

I am not sure exactly what you are trying to do or exactly what the
problem is.  There are two approaches.  One is some sort of streaming
server (probably icecast2) that you connect your various clients to.
The other approach is using something like mpd
(http://mpd.wikia.com/wiki/Music_Player_Daemon_Wiki).

I don't personally use either approach so I can't really provide any
guidance here.  I usually pick the artists or albums that I want, I
have never been really happy with any of the predictive/dynamic
playlist technologies, I find I skip just as much as when I drop a
bunch of tunes into a playlist and hit random.
