The benchmarks say lots of things, but I was disappointed in actual
performance.  It might be that I have somewhat unreasonable
expectations of performance, but even a dual core Atom was barely
adequate to run a single desktop OS for me.  The limited RAM in
particular is a pain.

I prefer the 500Mhz Geode as the performance hit is actually
justifiable by power savings.

Memory Express has the following motherboard:

Before memx started carrying this stuff I usually went to
http://www.ncix.com (ncix still has a better selection).  This is
where I got my Core2Duo on a mini-itx motherboard that is my current
ESXi server at home here.

http://www.logicsupply.com has the best selection but tends to be a
little pricey.

Unless you  absolutely need the small form factor, I would recommend
the slightly larger u-ATX form factor.  There are better thermal
tolerances on the slightly larger form factors.
