I have used Acidrip in the past to convert a DVD that I own into a more
friendly computer format.  There are a number of ways to do it (basic
overview: rip the DVD to the hard drive, transcode to another format).

If you need to capture video input, I have heard that Hauppauge makes a
USB device that is supported under Linux.  I have never used one of
their USB devices though their PCI ones do in fact work quite well.
