SquirrelMail is very easy to set up. It doesn't quite have the "polish" of a professional system (in terms of looks/appearance), but it does it's job very well. You can tweak the appearence (headers/footers/css, etc) to suit your site.
Other options include Horde with IMP, OpenWebMail, and a few others. Setting up Horde is more of a pain, but it is a little more flexible (I personally wouldn't recommend it, if SquirrelMail would do the job for you - I just don't think it's worth the hassells getting it running unless there is something very specific that Horde does that Squirrel can't.)
