Some Apache projects (Struts 2, for example) use Confluence, and they have an open source license option. I have some issues with the wiki software itself, but it's workable. Wiki contributors must file a CLA (a contributor's license agreement) since the wiki is exported and shipped in the distro under the ASL (apache license), and it helps to weed out the chaff--I'm actually not in favor of completely unrestricted access to the wiki.
