I guess I'm surprised to hear anyone say their email serve loads are predictable. More likely is overloading is not a problem for you. I've never worked in an environment where overloading was easily ignored, but I've worked at some high visibility sites where email is money. It's useful to know that on any given day any internet connected mailer can suffer a major DDOS attack. Or even a minor one. What happens next depends on the capability of the site to defend itself and the consequences of losing smtp services for a time. Some folks don't care much, some do, if the mail gateway rolls over and dies.
