We do this with Vexim2[1] every day!
We can turn on/off virus scanning/spam filtering, or even the
(virtual) domain itself.
If you find vexim useful - you'll have to run Exim as your MTA - then
you are most welcome to join the mailing list, or even better still
tell the powers that be to contribute to these projects - ClamAv, Vexim,
Exim[2] ;-)
