The RPM builds the milter automatically.  You'll need to edit the
clamav.spec in /usr/src/redhat/SPECS, and remove the milter config
option, then remove the milter path towards the bottom of the files
section.

Then

rpmbuild -bb --clean clamav.spec

and you'll have an rpm.
