Surely "SMTP Proxy" is almost the definition of a mail server (the SMTP part, 
that is, not the POP3 / IMAP part, which is a separate piece of software 
anyway)?

I think the answer to your requirements is to set up a mail server with no 
user accounts, simply acting as a backup relay for your domain/s.   That 
would be a very simple config for sendmail, I presume similarly simple for 
Exim, Postfix, etc.   Make sure this machine is the only mail server 
accessible from the outside world, and all your incoming mail will go through 
it and get scanned on the way to your "real" mail server.
