What OS are you running? If it's FreeBSD, then most of what you need to do is very simple. The FreeBSD ports system has the latest versions of Postfix, Amavisd-new and SpamAssassin. ClamAV installs very easy.
You can also find excellent documentation on Postfix at www.postfix.org.
I can give you clues and tweaks and advice also, but only on FreeBSD.
