All ceph releases are stable, but they are stable LTS for firefly,hammer,jewel,...
So with LTS releases, you'll have more updates on the longterm. with infernalis for example, you can expect 2 or 3 point releases maximum, then you'll need to upgrade to jewel if you want to have new updates.
