As far as RBD is concerned you could backup the volumes to a different
pool (or even a different cluster), as explained here:

https://ceph.com/dev-notes/incremental-snapshots-with-rbd/

ie. doing a deep copy first and then copying incremental snapshots above
that. Openstack cinder , for eg., supports this functionality in form of
*backups* allowing backups to a different pool or cluster.
