There are configuration values that you can set to define which images to use. See https://docs.ceph.com/en/latest/cephadm/services/monitoring/#using-custom-images for details.
The list of default images is documented here: https://docs.ceph.com/en/latest/cephadm/services/monitoring/#default-images (change `latest` to your release).
