opcion 1: si pudieras pausar la vm (pausar no es apagar) podrías entonces usar virt-clone y luego despausarla. opcion 2: podrías crear un disco, particionarlo y luego montarlo en /mnt entonces haces rsync desde la vm hacia este disco montado en /mnt.
