Inputs for two aspects of your problem.
1. You can use a rotary evaporator commonly used in chemistry labs to
evaporate nice layers of large amount of  lipid sheets.

2. I used avanti all the time but for a large scale prep, I used once the
brand in the link which provides rediculously cheap lipids (listed price).
