SNAPSHOT builds are pre-release and should be used for testing only. The 5.3 branch prior to 5.3.7-SNAPSHOT has a known issue with Google Apps SAML integration. The 5.3.7 release is planned for the end of this month, so you can safely use the 5.3.7-SNAPSHOT for testing.
