Golden Deluxe Cake
Makes 12 servings
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 cup (2 sticks) butter, room temperature
2 cups packed brown sugar
1 tablespoon vanilla extract
4 eggs
1 cup milk
2 cups semi-sweet chocolate chips (divided)
¼ cup boiling water
1 cup powdered sugar
Prep time: 15 minutes. Cooking time: 60 minutes.
Preheat oven to 350 degrees. Grease and flour a 10-inch bundt or plain tube pan.
In a small bowl, combine the flour, baking powder and salt.
In a large bowl, combine butter, brown sugar and vanilla. Beat until creamy.
Add eggs one at a time, beating well after each addition. Blend in flour
mixture alternately with milk. Stir in 1 ½ cups chocolate chips.
Spoon batter into prepared pan. Bake in preheated oven 1 hour, or until a
toothpick inserted into center comes out clean. Cool 15 minutes. Remove from
pan to a wire rack.
To make chocolate glaze: In a medium bowl, combine remaining ½ cup chocolate
chips and the boiling water. Blend until smooth. Gradually blend in powdered
sugar, blending until smooth. Refrigerate a few minutes until a good pouring
consistency. Pour over cake.
