Upside-Down Apple Gingerbread
Yield: Serves 8
a.. 2 tablespoons unsalted butter
b.. 3 Golden Delicious apples, peeled, cored, and cut into 8 wedges each
c.. 2 tablespoons packed light brown sugar
d.. 1 1/2 cups all-purpose flour
e.. 3/4 teaspoon baking soda
f.. 1/4 teaspoon salt
g.. 1 teaspoon cinnamon
h.. 1 teaspoon ground ginger
i.. 1/4 teaspoon ground cloves
j.. 6 tablespoons unsalted butter
k.. 1/3 cup sugar
l.. 1 large egg
m.. 1/2 cup light molasses
n.. 1/2 cup hot water
Preparation
1.. 1. Preheat oven to 350ºF; grease an 8-inch round cake pan. In a skillet
over medium heat, melt 2 Tbsp. butter. Add apple wedges; sprinkle with brown
sugar. Sauté 5 minutes, until softened. Pour liquid into cake pan and arrange
apple wedges in a single layer.
2.. 2. Sift flour, baking soda, salt, cinnamon, ginger and cloves. Beat 6
Tbsp. unsalted butter and sugar until fluffy. Beat in egg and molasses. Beat in
1/3 of flour mixture and hot water until smooth; repeat twice. Pour batter into
pan; spread evenly over apples.
3.. 3. Bake for about 45 minutes, until a toothpick inserted in center of
cake comes out clean. Let cool on a rack for about 10 minutes. Run a knife
around pan edge to loosen, then invert cake onto a serving plate. Let cool to
room temperature before serving.
