CANADIAN BACON UPSIDE-DOWN CAKE
12 oz. Canadian bacon
3 Tbsp. butter
1 c. pineapple rings
(8 1/4 oz. can)
10 oz. pkg. cornbread mix
Melt butter in 10-inch skillet over low heat; remove
from heat. Drain pineapple. Place one in center of skillet.
Arrange bacon and pineapple slices around the center pineapple.
Prepare cornbread mix as label directs; spoon batter evenly
over bacon and pineapple; cover and cook over medium-low heat,
15 to 18 minutes, until toothpick inserted comes out clean.
Immediately invert cake onto heated platter. Cut in
wedges. Serve with maple syrup.
