Sparkling Easter Eggs

 



 

Servings: approximately 3 dozen 

Prep Time: 30 mins 

Total Time: 1 hr 30 mins 

 

  a.. 3  cups shredded unsweetened coconut
  b.. 1 1/2  cups pecan pieces
  c.. 2  3-ounce packages peach-flavored gelatin
  d.. 1  14-ounce can sweetened condensed milk
  e..  Sanding sugar*
1. In the work bowl of a food processor, combine coconut and pecan pieces. 
Pulse until fine. Pour mixture into a large bowl. Add gelatin and condensed 
milk, stirring until combined. 

2. Roll mixture into 1-inch balls. Roll balls in assorted colors of sanding 
sugar to coat. 

 

Note:

*Sanding sugar is a fine granulated sugar used to decorate baked goods and 
candies. It is available in a variety of colors from cake decorating suppliers.
