Hot Milk Cake
4 eggs
2 c. sugar
2-1/4 c. all-purpose flour
2-1/4 t. baking powder
1 t. vanilla extract
1-1/4 c. milk
2/3 c. butter
In a bowl, beat eggs with an electric mixer on high speed until thick, about 5
minutes. Gradually add sugar, beating until mixture is light and fluffy. In a
separate bowl, combine flour and baking powder. Add flour mixture and vanilla to
egg mixture; beat until smooth. Heat milk and butter in a saucepan over
medium-low heat, until butter melts, stirring occasionally. Add milk mixture to
egg mixture; blend well. Pour into a greased 13"x9" baking pan.
Bake at 350 degrees for 30 to 35 minutes, until cake tests done. Cool on a wire
rack before cutting.
Makes 12 to 16 servings.
