                       SUNDAY SPICE CAKE - TX SF 1981

   2 1/2           cups  cake flour
   1 1/4           cups  sugar
   1                tsp  salt
   1                tsp  cinnamon
      1/2           tsp  cloves
      2/3           cup  milk
      1/2           tsp  nutmeg
      1/2           tsp  allspice
      2/3           cup  shortening
   1                     /3 cup molasses
   2 1/2            tsp  baking powder
   1                     `/2 tsp baking soda
   3                     ggs -- ¥
      1/2           cup  milk
                         LEMON FILLING
      3/4           cup  sugar
   2               TBSP  cornstarch
      3/8           tsp  salt
   1               TBSP  lemon rind -- grated
      1/2           cup  lemon juice
      1/2           cup  water
   1                     egg -- beaten
   1               TBSP  butter
                         MARSHMALLOW FROSTING
   2 1/2           cups  sugar
   1                cup  evaporated milk
      1/2           cup  butter
   7                 oz  marshmallow creme -- (1 jar)

Combine flour, sugar, salt, cinnamon, cloves, 
milk, nutmeg, allspice & shortening & molasses in 
bowl & beat at medium speed for 2 minutes.  Stir 
in baking powder & baking soda.  Add eggs & 
milk.  Beat for 2 minutes.  Pour into 3 greased & 
floured 8" tins.  Bake at 375 degrees for about 
35 minutes.  Cool in tins for 15 minutes.  Turn out onto racks to cool.

FILLING:  On top of double boiler mix dry 
ingredients well.  Add remaining 
ingredients.  Cook over boiling water, stirring 
constantly until thickened.  Cool & spread between layers of cake.

FROSTING:  Combine sugar, milk & butter in medium 
saucepan.  Cook over medium heat & stir until 
mixture reaches soft ball stage.  Remove from 
heat & stir in marshmallow creme.  Beat with 
wooden spoon until mixture is of spreading consistency.
