Maple Cinnamon Cake
1/2 cup unsweetened applesauce
1/2 cup pure maple syrup
1/4 cup vegetable oil
1 lrg egg
1 tsp vanilla extract
1 1/2 cup cake flour
1/2 cup golden brown sugar - (packed)
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
➢ Preheat oven to 400 degrees. Spray 8- by 8- by 2-inch baking pan with
vegetable oil spray.
➢ Whisk applesauce, syrup, oil, egg and vanilla in large bowl until blended.
Sift flour, brown sugar, baking powder, cinnamon, baking soda and salt into
applesauce mixture. Stir to blend. Transfer batter to prepared pan.
➢ Bake cake until edges pull away from sides of pan and tester inserted into
center comes out clean, about 28 minutes. Transfer pan to rack and cool cake
completely. Cut into 12 pieces and serve.
➢ This recipe yields 12 servings.
➢ Comments: Maple syrup, brown sugar and cinnamon enhance this easy-to-make
cake.
