2 cups all-purpose flour
1 tbsp baking powder
1/2 cup butter, softened
3/4 cup superfine sugar
1 cup chopped dried apricots
3/4 cup shredded coconut
3/4 cup milk
2 large eggs, at room temperature
Preheat the oven to 350F. Butter and flour muffin cups. Sift the
flour and baking powder in to a bowl. Use your fingertips to rub in
the butter. Stir in the sugar, apricots, coconut, milk, and eggs
until well blended. Spoon the batter in to the prepared cups,
filling each 1/2 full. Bake for about 15-20 mins, or until a
toothpick inserted in to the center comes out clean. Cool the
muffins in the pan for 15 mins. Transfer to racks and let cool
completely.
This makes about 12 muffins.
