APPLE CHRISTMAS CAKE
1 1/2 c. cooking oil
2 c. sugar
3 eggs
Beat well above ingredients. Combine and sift three times:
2 c. flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. soda
Add to above mixture:
3 c. sliced, peeled apples
1 c. pecans
2 tbsp. vanilla
Bake in a greased and floured tube pan. TIP: Put a small pan
of water in the oven so the top won't become too crusty.
Very good for the freezer.
