PECAN APPLESAUCE CAKE
21/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
liz teaspoon salt
2 cups granulated sugar
11/2 cups vegetable oil
1 cup applesauce
4 large eggs, separated
2 tablespoons hot water
1 cup pecans, chopped
1/3 cup confectioners' sugar, to dust
Preheat the oven to 350°F . Butter and flour a 10-inch tube pan .. Sift the
flour, baking powder, cinnamon, ginger, and salt into a large bowl. . Beat
the sugar, oil, applesauce, egg yolks, and hot water in a large bowl with an
electric mixer at medium speed until well blended .. With mixer at low
speed, gradually beat in the dry ingredients. Stir in the pecans .. With
mixer at high speed, beat the egg whites in a large bowl until stiff peaks
form. Use a large rubber spatula to fold them into the batter .. Spoon the
batter into the prepared pan .. Bake for 70-75 minutes, or until golden, the
cake shrinks from the pan sides, and a toothpick inserted into the center
comes out clean .. Cool the cake completely in the pan. Iurn out onto a rack
and dust with the confectioners' sugar. Makes one 10-inch cake Prep: 20 min
