TROPICAL CHEESECAKE
(Diabetics Can Eat This)
3/4 c. graham cracker crumbs
3 Tbsp. butter or oleo, melted
8 oz. cream cheese, softened
1/2 c. sifted powdered sugar
or 9 packets Sweet 'N Low
1 (20 1/2 oz.) can crushed
pineapple, well drained
(2 1/2 c.)
2 oz. pkg. D-Zerta topping mix
plus 1 packet sweetener
Mix crumbs and butter, reserving 2 tablespoons. Press
crumbs on bottom of 8-inch round cake pan (I use spring-form
pan). Chill. Whip cream cheese and powdered sugar until
fluffy; stir in pineapple. Prepare topping according to
package directions. Fold in pineapple mixture; spread over
crust. Sprinkle with reserved crumbs. Chill well. Makes 6 to
8 servings. One 100 gram serving equals 13 carbohydrates, 2
protein, 19 fat.
